Our Favorite Granola Protein Bars

I’ve tried so many granola and proteins bar recipes throughout my lifetime but always felt like something was lacking in each one. That’s why I’m so happy to share with you that I’ve finally found Our Favorite Granola Protein Bars alhamdulillah!

Our Favorite Granola Protein Bars

Our Favorite Granola Protein Bars are:

  • gluten-free.
  • refined sugar free– sweetened naturally with honey.
  • kid-approved.

They have just the right amount of sweetness, saltiness, and crunchiness!

Note: For the flax meal, I put whole flax seeds into the coffee/spice grinder attachment of my food processor and blend until a powder forms.

Our Favorite Granola Protein Bars

Servings 24 bars

Ingredients

  • 2 cups oats certified gluten free if needed
  • 1 cup crisp rice cereal see note below
  • 1/3 cup protein powder of choice see note below
  • 1/3 cup flax meal
  • 1/4 cup chocolate chips see note below
  • 1/4 teaspoon natural salt
  • 1 cup peanut butter or nut or seed butter of choice, runny consistency add a bit of oil if the consistency is very thick
  • 1/3 cup honey preferably raw
  • 2 tablespoons oil, melted coconut or avocado oil
  • 1 teaspoon pure vanilla extract

Instructions

  • Blend the oats in a food processor or blender until partially broken down.
  • In a medium bowl combine the oats, cereal, protein powder, flax, chocolate chips, salt, peanut butter, honey, oil, and vanilla. Stir well or mix with hands until the dough is well combined and sticks together (add a spoon or two of water if needed to make it stick together).
  • Line an 8×8-inch pan with parchment paper so that paper overlaps edges. Press the dough firmly into the pan. Place the pan in the freezer for at least 30 minutes.
  • Remove bars from the freezer, lift out of the pan and slice into squares.
  • Store in an airtight container in the fridge for up to 2 weeks or in the freezer for up to 3 months.

Notes

I use these Enjoy Life Chocolate Chips.
For the protein powder, I've used both Now Foods Grass-Fed Whey Protein Concentrate and TrueFit Grass-Fed Whey Protein Shake.
You can use Nature's Path Organic Crispy Rice Cereal. If you live in the US, try these One Degree Sprouted Brown Rice Crisps.

    By flax meal do you mean powdered flax seeds ?

    Sounds delicious and so healthy!! Cant wait to try these! Its states “kids approved”. The recipe includes protein powder. Are those safe for small children? Many protein powders include artificial flavors and colors.

      It should be fine for older kids, for small children you could leave the protein powder out or maybe sub with almond flour. I’ve listed protein powders after the recipe which don’t contain any artificial ingredients. 💜

    Mmhmmm!! These look scrumptious!! Can I substitute coconut oil with something? Kids do not like the taste of coconut.

      I think ghee or butter would work, or avocado oil or a mild olive oil
