Our Favorite Granola Protein Bars

Ingredients

  • 2 cups oats certified gluten free if needed
  • 1 cup crisp rice cereal see note below
  • 1/3 cup protein powder of choice see note below
  • 1/3 cup flax meal
  • 1/4 cup chocolate chips see note below
  • 1/4 teaspoon natural salt
  • 1 cup peanut butter or nut or seed butter of choice, runny consistency add a bit of oil if the consistency is very thick
  • 1/3 cup honey preferably raw
  • 2 tablespoons oil, melted coconut or avocado oil
  • 1 teaspoon pure vanilla extract

Instructions

  • Blend the oats in a food processor or blender until partially broken down.
  • In a medium bowl combine the oats, cereal, protein powder, flax, chocolate chips, salt, peanut butter, honey, oil, and vanilla. Stir well or mix with hands until the dough is well combined and sticks together (add a spoon or two of water if needed to make it stick together).
  • Line an 8×8-inch pan with parchment paper so that paper overlaps edges. Press the dough firmly into the pan. Place the pan in the freezer for at least 30 minutes.
  • Remove bars from the freezer, lift out of the pan and slice into squares.
  • Store in an airtight container in the fridge for up to 2 weeks or in the freezer for up to 3 months.
