No Bake Chocolate Banana Pie

Temperatures are starting to soar here in Saudi, which makes it the perfect time to whip up this quick and nourishing No Bake Chocolate Banana Pie!

No Bake Chocolate Banana Pie

A few reasons why you should make this No Bake Chocolate Banana Pie…

  • It’s high in protein (from the nut butter) and healthy fats (from the coconut oil).
  • No refined sugar here… banana and dates give this pie it’s natural sweetness.
  • It’s quick and easy to put together.
  • In addition, it’s gluten-free and paleo-friendly.
  • And above all, it’s super delicious and refreshing! Everyone in my family loves it, even my picky eater discerning connoisseur!

If you’re in a hurry, you can easily make this pie without the crust. It would be more like a mousse in that case, and you could put it into individual ramekins or small bowls instead of a pie dish.

I store this pie in the freezer and thaw it just before eating.

Prep Time 15 minutes minutes
Total Time 15 minutes minutes
Servings 6 people

Ingredients

For the Pie Filling:

  • 1 cup nut butter of choice such as peanut butter, almond butter, or cashew butter
  • 4 medium ripe bananas at room temperature
  • 1/4 cup coconut oil melted
  • 2 tablespoons cocoa powder or cacao powder
  • 2 teaspoons pure vanilla extract
  • 1/4 teaspoon sea salt or Himalayan salt
  • sweetener of choice, to taste Such as stevia, honey, pure maple syrup, or coconut sugar. I like to use a pinch of stevia, or 2 tablespoons of maple syrup.

For the Crust:

  • 1/2 cup nuts of choice
  • 1/2 cup shredded coconut
  • 1/3 cup pitted dates
  • 1/8 teaspoon salt

Instructions

  • For the crust, combine all ingredients in a food processor and blend until crumbs form. Transfer to a round pie dish. Press the crust into the pan firmly.
  • For the pie filling, blend all ingredients until smooth (no need to clean the food processor after making the crust). Pour the filling over the crust, and refrigerate about 3 hours, or until firm. Or if you can't wait, put in the freezer until firm.
  • Decorate with crushed nuts, chocolate chips, or chocolate sauce, if desired.
  • Store left-overs in the freezer and thaw slightly before eating.

I like to use raw cacao powder
      https://www.iherb.com/pr/Now-Foods-Real-Food-Organic-Raw-Cacao-Powder-12-oz-340-g/73623?rcode=JNL034.
Or even better would be fermented cacao powder

I was having a hard time finding natural vanilla here so I started making my own. I get whole vanilla beans from amazon, cut into 1 inch pieces, and just soak the beans in vegetable glycerin for 6 weeks. It makes a very delicious vanilla syrup which I use in all my recipes in place of vanilla extract.
