Healthy No-Bake Chocolate Bars

Healthy No-Bake Chocolate Bars

These healthy no-bake chocolate bars are super easy to make and so delicious! They’re perfect for those hot summer days when you’d rather not turn on the oven.

These Healthy No-Bake Chocolate Bars are:

  • high in protein
  • sweetened naturally with honey
  • optionally gluten free and nut free

My kids love these, and love helping me make them. It’s a snack I don’t feel guilty giving them.

Healthy No-Bake Chocolate Bars

They keep well in the fridge or freezer. I like to wrap them individually and keep some in the freezer for a quick snack.

You can form them into little balls instead of bars.

Healthy No-Bake Chocolate Bars

Ingredients

For the Chocolate Bars:

  • 2 cups oats blended into a flour
  • 1/2 cup nuts of choice, crushed or puffed rice
  • 1/2 teaspoon sea salt
  • 1/2 cup almond butter or peanut butter, or sunflower seed butter
  • 2 tablespoons butter melted
  • 1/2 cup honey or pure maple syrup
  • 1 teaspoon pure vanilla

For the Chocolate Glaze:

  • 3 tablespoons chocolate chips (see notes)
  • 1/2 tablespoon butter, ghee, or coconut oil

Instructions

  • Line a square pan with a piece of wax paper. Mix the oat flour, nuts (or puffed rice), and salt together in a large bowl.
  • Add in the nut/seed butter, butter, honey, and vanilla. Stir well to combine. If it's too dry, add a bit of milk. The consistency should be like cookie dough.
  • Press firmly into the pan. You can also roll into balls instead. Put in the freezer for at least 5-10 minutes.
  • Melt the chocolate chips and butter together and stir until smooth.
  • Remove from the freezer and slice into bars. Drizzle with melted chocolate and freeze again until set.
  • Store in the freezer or fridge.
