Easy & Nourishing Breakfast Bowl

This Easy & Nourishing Breakfast Bowl can be put together in minutes, and will keep you energized throughout your morning!

Easy & Nourishing Breakfast BowlReplaced sugar-laden boxed cereals with this delicious and healthy breakfast. If you cook the sweet potato the night before, it comes together in just a few minutes.

To roast the sweet potato, wash well and cut in half lengthwise. Drizzle with a little coconut oil or ghee. Place cut side down and roast at 375 F (190 C) for 25-35 minutes, or until soft. Or you can cook the potato in the microwave. Wash well, poke with holes, and cook for about 5-10 minutes until soft.

This breakfast would also be wonderful with some of my yummy Avocado Green Sauce.

Easy & Nourishing Breakfast Bowl

Servings 2 people

Ingredients

  • 2-3 cups greens of choice such as lettuce, spinach, kale, or arugula
  • 2-4 eggs cooked in butter, ghee, or coconut oil
  • 1 large sweet potato baked or cooked in the microwave until soft
  • 1/2 cup naturally fermented sauerkraut or kimchi
  • 1 avocado sliced
  • sea salt, paprika, cilantro or parsley for garnish

Instructions

  • Make a bed of greens in each bowl.
  • Top with all the other ingredients. Sprinkle with sea salt, paprika, cilantro or parsley for garnish. Enjoy!
