Creamy Chicken Soup

This Creamy Chicken Soup is fast, easy, nourishing, and delicious! I’ve included both gluten-free and dairy-free options.

Creamy Chicken Soup

I especially like to serve this soup if someone in the family is feeling a bit under the weather. It contains bone broth, which is inexpensive and easy to make at home. Bone broth has so many incredible health benefits.

Bone broth:

  • is an excellent source of minerals.
  • boosts the immune system.
  • improves digestion and heals inflammation in your gut lining.
  • is high in calcium, magnesium, and phosphorus (promotes strong teeth and bones).
  • has a high collagen content for healthy joints, hair, skin, and nails.

Here is an easy recipe for Bone Broth which I hope you will make a regular part of your diet.

Prep Time 10 minutes minutes
Cook Time 15 minutes minutes
Total Time 25 minutes minutes
Servings 4 people

Ingredients

  • 3 tablespoons butter or coconut oil
  • 1 large onion chopped
  • 5 tablespoons whole wheat flour* or gluten-free flour
  • 1 teaspoon sea salt
  • 1/8 teaspoon black pepper
  • 2 teaspoons seasonings of choice such as rosemary, parsley, sage, or thyme
  • 3 cups bone broth
  • 1/2 cup milk of choice, or cream (whole milk, coconut milk, almond milk, or fresh cream)
  • 1.5 cups cooked chicken cut into small pieces

Instructions

  • In a medium-size saucepan, heat the butter over medium heat. Add the onion, and cook until soft.
  • Add the flour, salt, pepper, and seasonings, and stir to combine well. Cook, stirring constantly, until the mixture has just begun to turn a very light brown color.
  • Add the bone broth slowly, stirring constantly. Add the milk, and continue to stir until the mixture is smooth. Bring the mixture to a simmer, and continue to cook, stirring occasionally, for about 10 minutes until the mixture thickens.
  • Remove the saucepan from the heat, and add the cooked chicken. Stir to combine.
