I had the pleasure of tasting a salad similar to this in a Middle Eastern restaurant last summer, and have been dreaming about it ever since (I know it’s weird, I dream about salads). I was happy to discover how quick and easy it was to recreate this salad at home.
Arugula, also called rocket lettuce (جرجير jarjeer in Arabic), is a tangy, leafy green vegetable. It’s not only delicious, but also contains loads of nutrients.
Some of the many benefits of arugula include:
- A cancer-fighting food with high levels of antioxidants.
- Improves heart health and lowers inflammation.
- A great source of vitamin K, vitamin A, and folate, and beta-carotene.

Arugula Walnut Feta Salad
Servings 4 people
Ingredients
- 4 cups arugula washed and torn into bite-sized pieces
- 1 small onion chopped
- 1 pomegranate (the seeds of)
- 1/2 cup walnuts chopped
- 1/2 cup cherry tomatoes
- 1/3 cup feta cheese, crumbled
For the Dressing:
- 3 tablespoons olive oil
- 1 tablespoon vinegar (I used balsalmic vinegar)
- juice of 1/2 lemon
- salt and pepper, to taste
Instructions
- Mix all the salad ingredients in a large bowl or platter.
- Combine the dressing ingredients and mix into the salad just before serving.
- Enjoy!
