Easy Chicken Fajitas

These Easy Chicken Fajitas are quick to put together, especially if you have tortillas already made and stored in the freezer. You can customize the toppings according to preference, so that everyone’s happy!

I usually make a double batch of these Soaked Wheat Tortillas and store them in the freezer for later use.

Then I simply cook the chicken and veggies, warm up the tortillas, and prepare any optional toppings. Some of our favorites include:

  • Sliced Avocado
  • Fresh cilantro or parsley
  • Hot sauce (I use my homemade fermented hot sauce)
  • Kimchi
  • Lebneh, sour cream, or cheese
  • My favorite Avocado Dressing
  • Fresh lemon or lime juice

Easy Chicken Fajitas

Servings 4 people

Ingredients

  • 4-8 tortillas
  • 1 pound (500g) boneless chicken breast cut into bite-sized pieces
  • 2 tablespoons butter, ghee, or coconut oil
  • seasonings of choice I use 1 tsp cumin, 1 tsp paprika, 1/2 tsp garlic powder, and salt/pepper to taste
  • 2 bell peppers (any color) sliced
  • 1 medium onion sliced
  • optional toppings: sliced avocado, fresh cilantro or parsley, hot sauce, kimchi, sour cream, lebneh, cheese, fresh lemon or lime juice

Instructions

  • Heat 1 tablespoon oil in a large skillet over medium-high heat.
  • Add chicken and sprinkle with 3/4 of the seasoning. Cook until lightly browned.
  • In a second pan, heat another tablespoon oil over medium heat. Add peppers and onion. Stir in remaining seasoning. Cook until vegetables are soft, about 8 to 10 minutes, stirring occasionally.
  • Warm up tortillas. Fill warmed tortillas with chicken, peppers, and onions. Top with favorite garnishes. Enjoy!

    These were amazing although I used ready-made wraps. I made them for the kids school and for once they finished their lunches. Infact they loved them so much that they wanted to have them for dinner too. your recipes are life savers Dr Laura💕
