Why is this The BEST Chicken?

The BEST Chicken

Because it’s:

  • delicious (everyone in our family loves it)
  • super-fast to prepare (20 minutes from start to finish)
  • healthy
  • requires ingredients which I usually have on hand

What more could you ask for? 

This is one of those dishes that saves the day when I don’t have much time to cook, but still want to get a healthy meal on the table. I can quickly get this chicken on the stove, steam some broccoli, cut up a side salad, and dinner is on the table in 20 minutes!

And this chicken is so easy to prepare, my 10-year old daughter can make it on her own (with supervision using the hot stove, of course).

My kids request this chicken often. Which makes me happy because it’s so fast and easy to prepare!

This dish can be made with breadcrumbs, or almond flour if you need it to be gluten-free. I prefer to use homemade breadcrumbs, which are easy to make and much tastier than store -bought.

To make homemade bread crumbs…

I take leftover bread, cut it into cubes, and cook it at 350 F (175 C) until dry. Then I grind it up in my blender or food processor until crumbs form. You can also place the dried bread in a sealed bag, and smash with a rolling pin to break it into crumbs. I usually make a large batch and keep it in the freezer until needed.

Ingredients

  • 1/2 kg (about 1 pound) boneless chicken breast
  • 50 grams (about 1/4 cup) butter melted
  • 1/2 cup breadcrumbs or almond flour
  • 1/2 teaspoon garlic powder
  • 1 teaspoon sea salt
  • 2 tablespoons butter

Instructions

  • Start by pounding the chicken breast very thin (about 1/4 inch or 1/2 cm). I put the chicken in a plastic bag while pounding to make clean up easier.
  • But the breadcrumbs, garlic powder, and salt in a small, wide bowl and mix well.
  • In another small, wide bowl, melt the 50 grams (1/4 cup) butter.
  • Heat the 2 tablespoons butter in a wide skillet.
  • Dip each chicken breast first in the melted butter, then in the breadcrumb mixture. Cook until lightly browned, flip over, and cook until chicken is no longer pink in the center (about 10 minutes total).
  • Salt to taste. Enjoy!
