Mayo Free Chicken Salad

This delicious Mayo Free Chicken Salad is gluten free and packed with nutrients.

Mayo Free Chicken Salad

This salad uses yogurt, a great source of probiotics, rather than unhealthy mayonnaise.

Most store-bought mayonnaise contains:

  • unhealthy fats– such as soybean oil, corn oil, or other vegetable oils. Read here about the health dangers of vegetable oils.
  • sugar– especially the “low-fat” mayonnaise, which contains about a teaspoon of sugar per serving.
  • artificial ingredients– such as preservatives, additives and monosodium glutamate (MSG).

I love bringing this salad on picnics (stored with an ice pack). It’s quick to put together, especially if you already have some leftover cooked chicken.

It tastes even better if made ahead of time. Add the nuts just before serving. Don’t forget them, they make a big difference in the taste of the salad!

Mayo Free Chicken Salad

Ingredients

  • 1 pound (500 grams) cooked, shredded chicken
  • 1 medium apple chopped
  • 1 cup grapes sliced in half
  • 1 small red onion chopped
  • 2 stalks celery chopped (optional)
  • 1/2 cup walnuts chopped
  • 1 cup plain whole yogurt
  • 2 tablespoons lemon juice
  • 3 tablespoons honey
  • sea salt and pepper, to taste
  • romaine lettuce for serving
  • cilantro for garnish (optional)

Instructions

  • Combine chicken, apple, grapes, onion, celery, and walnuts in a large bowl.
  • Add yogurt, lemon juice, honey, salt and pepper and mix until all ingredients are coated.
  • Serve over lettuce or wrap in romaine leaves.
