Pear and Pomegranate Salad

Ingredients

  • 6 cups lettuce, chopped
  • 1 cup pear, chopped or sliced
  • 1 cup pomegranate seeds
  • 1/2 cup walnuts, chopped
  • 1/3 cup feta cheese, crumbled
  • 1/2 cup dates, chopped
  • 1/8 cup red onion, chopped

For the Dressing

  • 4 tablespoons olive oil
  • 2 tablespoons apple cider vinegar
  • 2 teaspoons mustard
  • 1 tablespoon honey

Instructions

  • Combine the salad ingredients. Slice the pear just before serving so it doesn't turn brown.
  • Combine the dressing ingredients in a container and shake well. Pour over the salad just before serving.
  • Enjoy!
