Mediterranean Salad

Ingredients

  • 4 cups romaine lettuce chopped
  • 2 cups tomato chopped
  • 1 cup cucumber chopped
  • 1 small red onion chopped
  • 1/2 cup sliced olives
  • 1 jar chickpeas drained and rinsed
  • 1 cup feta cheese crumbled

For the Dressing

  • 1/3 cup olive oil
  • 1/4 cup lemon juice
  • 1/4 cup fresh parsley finely chopped
  • 1/4 cup fresh mint finely chopped
  • 1/2 teaspoon natural salt
  • 1/4 teaspoon black pepper

Instructions

  • Combine the lettuce, tomatoes, cucumbers, red onion, olives, chickpeas, and feta cheese in a large dish and mix well.
  • Combine all the dressing ingredients in a small bowl or jar and mix well.
  • Pour the dressing over the salad just before serving. Enjoy!
