In a medium saucepan, combine all ingredients EXCEPT the honey. We need to add the honey at the end because the heat will destroy many of its beneficial properties.
Bring to a boil, then reduce the heat and simmer for about an hour. The liquid will reduce.
Remove from heat and let cool until warm to the touch. Strain the syrup.
Add the honey and mix well until completely dissolved.
Store in the refrigerator in a clean glass jar. This will last for several months in the refrigerator.
