Double Chocolate Granola

Ingredients

  • 4 cups oats
  • 1 cup shredded coconut unsweetened
  • 1 cup crushed nuts (optional)
  • 1/4 cup chia* or flax seeds (optional)
  • 1/2 teaspoon natural salt
  • 1/3 cup melted coconut oil*, butter, or ghee
  • 1/2 cup cocoa powder
  • 1/4 cup warm water
  • 1 teaspoon natural vanilla
  • 1/3 cup honey
  • 1/4 cup chocolate chips

Instructions

  • Preheat your oven to 325°F (160°C).
  • In a large bowl, combine the oats, shredded coconut, nuts, seeds, and salt.
  • In a medium bowl, combine the melted coconut oil, cocoa powder, warm water, vanilla, and honey. Stir until well combined.
  • Add the wet ingredients to the dry ingredients and mix well, until all the oats are coated.
  • Place in a large baking dish and press down lightly.
  • Bake for 15 minutes, stir, and bake for another 15 minutes. Watch closely at the end so the granola doesn't burn. At this point, I like to turn off the oven and let the granola sit in the oven for about 15 minutes. This makes it crispy without the risk of burning it.
  • Take the granola out of the oven and sprinkle the chocolate chips over the top (without stirring). Allow to cool. The granola will harden more as it cools.
  • Store in an airtight container.
