Preheat your oven to 325°F (160°C).
In a large bowl, combine the oats, shredded coconut, nuts, seeds, and salt.
In a medium bowl, combine the melted coconut oil, cocoa powder, warm water, vanilla, and honey. Stir until well combined.
Add the wet ingredients to the dry ingredients and mix well, until all the oats are coated.
Place in a large baking dish and press down lightly.
Bake for 15 minutes, stir, and bake for another 15 minutes. Watch closely at the end so the granola doesn't burn. At this point, I like to turn off the oven and let the granola sit in the oven for about 15 minutes. This makes it crispy without the risk of burning it.
Take the granola out of the oven and sprinkle the chocolate chips over the top (without stirring). Allow to cool. The granola will harden more as it cools.
Store in an airtight container.
