Double Chocolate Cookies (gluten-free)

Ingredients

  • 2 eggs
  • 1/2 cup butter or coconut oil softened
  • 1/2 cup nut or seed butter of choice sunflower seed butter, almond butter, cashew butter, or peanut butter
  • 1/2 cup sweetener of choice honey, maple syrup, unrefined cane sugar, coconut sugar
  • 1/3 cup cocoa powder
  • 1 teaspoon vanilla
  • 3 cups oats blended into flour
  • 1 teaspoon baking soda
  • 1 teaspoon baking powder
  • 1 teaspoon natural salt
  • 3/4 cup chocolate chips or a finely chopped chocolate bar

Instructions

  • Preheat your oven to 350°F (175°C).
  • Add all the wet ingredients in a large bowl (egg, butter, sweetener, and vanilla) and beat until smooth. Add the cocoa powder and mix well.
  • Add the dry ingredients (oat flour, baking soda, baking powder, and salt) and stir well.
  • Fold in the chocolate chips.
  • Form the dough into balls and place on a buttered cookie sheet. Leave some space between each ball for the cookies to expand. Gently press down on each ball to flatten slightly.
  • Bake for about 8-10 minutes, until just set. Don't over-bake or your cookies will be hard!

*make sure to use gluten-free oats, if needed
*I use these chocolate chips, because they contain only natural ingredients.
