Cucumber Avocado Peach Summer Salad

Ingredients

For the Salad:

  • 4 small cucumbers, sliced (about 2 cups)
  • 2 cups peaches, nectarines, or apricots cut into bite-sized pieces
  • 1 avocado cut into bite-sized pieces
  • 1 small red onion, chopped
  • 1/4 cup feta cheese, crumbled (optional)
  • 1/4 cup walnuts, chopped (optional)

For the Dressing:

  • 2 tablespoons olive oil
  • 1 tablespoon apple cider vinegar
  • 1 lemon, juice of
  • 1 tablespoon honey (preferable raw)
  • fresh or dried basil, to taste (or mint)
  • sea salt and pepper, to taste

Instructions

  • Mix all the salad ingredients, except the walnuts, in a medium sized bowl.
  • Mix the dressing ingredients in a small jar and shake well.
  • Pour the dressing over the salad and mix well. Cover and refrigerate for a couple of hours. Add the walnuts just before serving.
  • Enjoy!
