Energy Bars

These delicious Energy Bars contain only 4 ingredients, and are perfect to pack in your bag for school lunches or for whenever you’re outside the home and hunger strikes! 

Energy Bars

These bars are a much smarter option than buying unhealthy packaged foods from the cafeteria or vending machine!

These Energy Bars are:

  • naturally sweetened with dates.
  • a great source of protein and healthy fats from the cashews. Cashews are also packed with vitamins and minerals.
  • can be easily customized to your liking. For example, you can add a few spoons of cocoa powder or coconut flakes. Or use a different kind of nut or combination of nuts (such as almonds, walnuts, or pecans).
  • a great source of energy to get you through the rest of your morning (or afternoon). These bars won’t make you feel loaded down by excess sugar and carbohydrates.

Ingredients

  • 3/4 cup (100 grams) cashews
  • 1/2 cup (110 grams) dates
  • 1/8 teaspoon natural salt
  • 2 tablespoons chocolate chips

Instructions

  • If your dates are very dry, first soak them in warm water for a few minutes and drain.
  • Combine all ingredients in a food processor and blend until a soft dough forms. Add a little water if the mixture is too dry.
  • Form the dough into bars, or balls.
  • Store in the fridge or freezer.

Notes

*I use these chocolate chips, because they contain only natural ingredients.
