Cashew Ice Cream

I know it’s not exactly ice cream weather (even here in Riyadh!) but I couldn’t wait any longer to share this delicious Cashew Ice Cream recipe with you!

Cashew Ice Cream

This ice cream is creamy and so delicious.  It is naturally sweetened with dates.

This recipe doesn’t require an ice cream maker (although you can certainly use one for quicker results).

Some amazing health benefits of cashews include:

  • Improving the health of your bones

Cashews are a good source of calcium, magnesium, and potassium, and vitamin K. All of these nutrients work together to strengthen your bones and prevent osteoporosis.

  • Protecting your heart

Did you know that the risk of heart disease is 37% lower for those consuming nuts more than four times per week compared to those who never or seldom consume nuts? 

Studies show that eating nuts, including cashews, can also help lower your cholesterol levels.

  • Preventing gallstones

Studies have shown that frequent nut consumption is associated with a reduced risk of gallstone disease.

  • Preventing and fighting cancer

Regularly eating nuts, including cashews, lowers your risk for certain cancers, especially liver and colon cancers. They can also help fight certain cancers.

  • Reducing your risk of diabetes

Nuts can help to control blood glucose levels, and are therefore useful in diabetes control and prevention.

Cashew Ice Cream

Cashew Ice Cream

Prep Time 10 minutes minutes
Total Time 30 minutes minutes
Servings 6 people

Ingredients

  • 1 1/2 cups milk of choice such as dairy milk, coconut milk*, or almond milk
  • 1 cup pitted dates
  • 1 cup cashew butter or almond butter
  • 1 tablespoon cocoa powder
  • 2 teaspoons pure vanilla extract
  • 1/2 teaspoon natural salt

Instructions

  • Combine all ingredients in a blender or food processor. Blend until well combined.
  • Place the mixture in a freezer-safe container and put in the freezer for at least 4 hours. Give it a stir every once in a while.
  • Or for quicker results, freeze the mixture in an ice cream maker.
  • Enjoy!
