Fresh Tomato Soup

This Fresh Tomato Soup is creamy, comforting, and super easy to make! Everyone in our family loves it, and it’s perfect for the cool winter nights ahead.

Fresh Tomato Soup

Tomatoes are packed with nutrients which can:

  • lower your risk for cancer, especially prostate cancer in men.
  • fight inflammation in your body, thereby slowing the progression of diseases such as arthritis, heart disease, and diabetes.
  • protect your eyes from age-related changes.
  • strengthen your skin and bones.

And using Homemade Bone Broth will give this soup another fabulous boost of nutrition! If you’re not already consuming bone broth on a regular basis, I highly recommend that you do! It is rich in minerals which can boost your immune system, heal your gut lining, and build strong hair, skin, nails, and joints.

Fresh Tomato Soup

Cook Time 15 minutes minutes
Total Time 25 minutes minutes
Servings 6 people

Ingredients

  • 2 tablespoons butter or coconut oil
  • 1 medium onion chopped
  • 2 carrots peeled and chopped
  • 2 cloves garlic finely chopped
  • 2 tablespoons tomato paste
  • 8 tomatoes chopped
  • 1 teaspoon dried basil or 1/4 cup fresh basils leaves, chopped
  • 1 teaspoon salt
  • 1/2 teaspoon pepper
  • 3 cups bone broth
  • 2-3 tablespoons fresh cream
  • Parmesan cheese to garnish (optional)

Instructions

  • Melt the butter over medium heat. Add the onion and carrot and cook for about 5 minutes until the onions are soft.
  • Add the garlic and cook for another minute.
  • Add the tomato paste and cook for one more minute. Add the fresh tomatoes and cook for 2 minutes. Add the basil, salt, and pepper.
  • Pour in the bone broth, cover the pan, and cook for about 10 minutes until the carrots are soft. Puree the soup until smooth.
  • Add the fresh cream and mix well. Check for seasonings and add more if desired. Sprinkle with parmesan cheese (optional). Enjoy!

    dear Dr Laura. love your recipes. have you tried roasting tomatoes before adding them to soup. the taste is phenomenal specially when I had fresh tomatoes from my garden

      Yes I have, and I agree it’s delicious! I also love roasting butternut squash and garlic and then adding to soup!

    Salaams Laura, this looks amazing, I really need to change my diet and lifestyle having many medical conditions, alhamdulillah. I dislike many dairy products unfortunately, could I omit the butter and use sunflower oil? Not sure how coconut oil would taste as I dislike the smell of that too. Often suffer from nausea so many food items I can’t eat!

      Instead you could use ghee, olive oil, or avocado oil.
