These Double Chocolate Cookies (gluten-free) are moist, chewy, and will satisfy even the most intense chocolate craving!
When I was attempting to cure my 3-year old son’s severe eczema (and had tried what seemed like every cream and lotion ever made) I finally decided to try an elimination diet.
What is an Elimination Diet?
Many people suffer from food intolerances or sensitivities without even knowing it. These people have difficulty digesting certain foods (for example wheat, dairy, or nuts). But unfortunately food intolerances don’t just affect the digestive system. We now know that they are linked to a long list of problems, including:
- asthma and allergies
- autoimmune disorders
- skin conditions (such as eczema)
So with an elimination diet, you temporarily cut out certain foods from your diet, and then slowly reintroduce those foods one at a time until you (hopefully) discover which food you were reacting to.
With my son, we started by cutting out the foods which most often cause eczema to flare: all wheat and gluten products, eggs, dairy products, nuts, fish, citrus, and soy. It was challenging, to say the least! But alhamdulillah we eventually discovered that he was reacting to dairy and nuts.
At one point in the diet, we were feeling very overwhelmed and discouraged. We felt like there was so much we couldn’t eat, and it was nearly impossible to go anywhere without bringing our own food.
Then, I discovered these cookies, and they literally saved us alhamdulillah! We finally had a treat which my son could indulge in. And it was wonderful that everyone else in the family also loved these cookies!
Even now, after my son’s eczema has completely resolved alhamdullah, we still make these cookies often.
